Where every loaf begins
Our flour travels less than fifty miles before arriving at Bakery Co. Unlike industrial flour that's processed in huge factories, our flour is stone-milled in small batches to preserve the grain's natural flavour and nutrients.
That extra care is one of the biggest reasons our bread tastes the way it does.
Why stone milling matters
Stone milling keeps the entire grain intact, including the bran and germ, which are often removed during large-scale processing. The result is flour with a richer flavour, better texture, and more natural oils that contribute to every loaf.
Freshly milled flour also absorbs water differently, giving our sourdough its signature open crumb and chewy crust.
