Bakery Co. began in a home kitchen in 2014 with a jar of sourdough starter and the belief that a neighbourhood deserves real bread. Everything since has risen from there.

The original starter

How it began

It started with bread nobody was baking.

Elena Marsh couldn't find a proper loaf anywhere in the neighbourhood. Supermarket bread was soft, sweet, and gone stale by Tuesday. So she started baking her own, selling loaves from her kitchen window on Saturday mornings.

The queue grew. First neighbours, then their friends, then strangers who'd heard about the sourdough with the crackling crust. Two years later she signed the lease on a tired old shopfront on Baker Street, dragged a secondhand deck oven inside, and painted the door jam red.

The recipe for everything since has stayed the same: good flour, long hours, and no shortcuts anyone could taste.

Why we still do it the slow way

People ask why we don't open earlier, bake bigger batches, or ship nationwide. The honest answer is that bread made in a hurry tastes like it. The starter in our fridge is older than some of our customers' children, and it has taught me one thing: the good stuff cannot be rushed.

So we keep it small. We bake what we can bake well, we sell it to people who walk through our doors, and when it's gone, it's gone. That's not a limitation. That's the whole point.
