Holiday baking isn't something you can organise overnight. Months before the festive season begins, we're already testing recipes, ordering ingredients, and planning production schedules.
Everything from butter and chocolate to festive packaging is carefully accounted for, helping us stay focused when orders begin pouring in.
A season built on teamwork
During the holidays, every member of the bakery has an important role. While one team prepares sourdough, another decorates celebration cakes, fills pastry displays, and packs customer orders.
Communication becomes just as important as baking. A well-organised team keeps every order moving smoothly from oven to counter.
Staying organised under pressure
Busy days don't leave much room for mistakes. Every order is checked twice before leaving the bakery, and every tray is labelled to ensure nothing gets missed.
Preparation is our biggest advantage. Dough is fermented overnight, ingredients are measured in advance, and production follows a carefully timed schedule from start to finish.

The easiest way to handle a busy season would be to produce everything faster.
We choose not to.
Every croissant is still laminated by hand. Every sourdough still receives its full fermentation time. Every cake is decorated individually. Speed may help today, but quality keeps customers coming back year after year.

The long mornings, full ovens, and endless orders are all worth it when customers return to tell us our bread became part of their family celebration.
